Are new sites covering a sub-niche stand a chance against high authority sites covering a niche?

I want to create a blog about a sub-niche, and the competition in this sub-niche is easy to moderate according to Mangools KWFinder.

The problem is for the most important keywords in this sub-niche, Google's top 10 results have high domain authority (above 50) and page authority (above 40).

Knowing that All of these sites focus on the general niche, Please, would a blog specializing in this sub-niche achieve good results?

My understanding is that Google assesses your site and if it decides that your posts can do a better job of 'answering the question' than your competitors then you will rank higher.

However, it might take a long time and a lot of effort to overtake your competition. For this reason, you may wish to explore other options such as a less competitive niche.

It can. You may not win on the top keywords, but you can on the longtail keywords. And, of course, there's always the buying ads option and social media.
