I've just turned vegetarian, so this is my first July 4th. What are you having for your 4th of July meal. Give me some ideas.

    I am not vegetarian, but I know how to make some killer vegetarian dished. Try these: Grilled portabella mushrooms, seasoned to taste. Coleslaw, only add a can of black beans and some condensed milk to your coleslaw. Potato salad add some grilled sweet potatoes to your potato salad ...add some condensed milk to your potato salad too. Grillin baked beans and a salad with fruits and nuts mixed in. ....enjoy

    Don't frown at the black beans and condensed milk in your slaw, it is gooooood stuff, you will never be the same. ...add a little West Indian to the flavor.

    No, the condensed milk. We like to add it to our potato salad, coleslaw, our macaroni pie (sweet macaroni & cheese baked to a golden brown). But if you are looking for a good spice to flavor everythng, ground star anaise(sp- not sure if I spelled that correctly) or what they call in the US, Chinese five spice - is good in everything.

    Since most people are grilling, grab your favorite kind of vegi burgers or vegi dogs. If that isn't your style, you can grill up a nice portabella mushroom and eat it like a steak or a burger patty. I love to slather them in bbq sauce and use them for burgers.

    There is also the vegi kebob! Those are always delicious and you can do so much with them!

    Morning Star Farms makes killer vegetarian BBQ 'Ribs' - the sauce is great if you like sweet and smoky -

    Grilled or Baked* sweet potato or yam, split and smashed in the skin with a fork (wash the potato good so you can eat the skin) - then I put nutmeg, butter or margarine and stevia (or honey) and smash it around some more. It's like a dessert. *(pierce the raw potato a few times with a fork so it doesn't explode)

    Baby greens and herb salad with balsamic vinegar and olive oil dressing - with almond slivers or sunflower seeds for a little extra protein - also dried cranberries are real festive.

    Brown rice pasta with olive oil and parmesian cheese (cold or hot) (with or without garlic)

    I love Chinese Five spices - it is great on steamed broccolli and just about anything because of the anise.

    Some 4th of July red white and blue desserts: blueberries and strawberries with whipped cream or cool whip (will you have cream or oil with that?) in a parfait glass - or red and blue jello cubes (made in an ice cube tray) with whipped cream, cool whip or vanilla ice cream or sorbet.

    Sweet potatoes are amazing and packed with nutrients! Always a great choice. I agree about the Morning Star Ribs. They are delicious. They are a summer staple for me.

      I eat their Garden Veggie Patties all the time.

    Just be sure to put a plate under Thom - they come 2 servings in the box - each serving is in a little plastic bag and you have to make a slit in it -

    Even the teeniest slit at the very top, the sauce will bubble out.

    Yeah I am a major Morning Star person - I eat the vege bacon with almond butter or peanut butter sandwiches, the vege sausage patties, the 'chicken' is good too.

    They are pretty expensive so I am glad Safeway (major grocery chain here) has a line of organics and at least 'eating right' stuff - they make a veggie patty that is half the price of Morning Star - lots of mushrooms in them.

    What I do with all the veggie patties is wave them for 1 minute and then kind of grill them in a pan with some olive oil so they are a bit crunchy (and a lot more flavor).

    I even cut them up in pieces after that and put them in pasta with olive oil and broccolli.

    There was a day many decades ago where I knew how to make a veggie patty with soy beans but I sure can't remember how I did it. I could save a ton of money if I could...

    Amanda - I am going to try your idea for a Portobello 'hamburger' - I have always wondered what to do with those!

      Thanks Pat. I don't own a microwave any more so I can't nuke anything
      It's not about thinking they are dangerous, I'm just pretty old fashion in the kitchen.
      An 11 year old said it best about the cost of organic healthy food. He said you either pay for the food or pay for the doctor visits. I'll grab the video and post it here.

    Had a portabella pizza here a few days ago - portabellas were on sale and we ate some buttered and broiled and stuck others in other stuff.

    Damn it people - now I'm hungry and have to go to the store. Not funny.
