Need to understand how backlinks and anchor text work?

Hi, I have a question which is giving me a headache. Why should we create backlinks with website domain as anchor text?

Also, does having internal links from blog pages to main site help in ranking main site for those keywords? (I can't figure out the reason for having blogs in main site)
