New page or Replace existing content?

I have an existing site that I used to rank for some competitive keywords, built some links for various anchors, centered my content around the main keyword, etc.
I've shifted my strategy to go after lower searched but less competitive terms. This has meant re-vamping my page titles, description, and content to account for newer keyword additions. A fictional example would be:
- Original: Best dog beds
- New: Best Dog Beds for Yellow Dogs (pretend people actually search this)
So I would augment/modify my content to be have more instances of "yellow" and update my backlink anchors as well.
I thought this would make my page rank easily for the new keywords, but so far after a month or so it has not.
So in short, should I have scrapped my original page and created a new one?
