Old website being re-furbished

I have an old site that I'm using to re-write posts and add new content.
However, I have no idea from which old account I did the Google webmasters stuff like Sitemaps etc.
So I have opened new Google search console account and added my site to that, with new sitemaps etc, but what happens to the old stuff?

Also, does this mean I'm starting all over again in Google's eyes even though my site is 5 years old?

    You aren't starting over, though the new content is. You could ensure that your sitemap has the same url - eg your site.sitemap.xml. Check your old gmail accounts for a Google Webmaster Tools Account.

    I have checked an account I had forgotten and it's there, site mapped with the old posts. Should I delete it from that account?
