Hi,
I wish to create mini blogs or mini sites and use adsense as my stream of income, the problem is I am stuck in choosing which platform to go with, either using a blog or create a site and which one is better in terms of ranking?, For instance I was planning to use the free blogger service for my blogs, is it ok using to create a mini blog and have greater rankings?

I would go with blog because it is a much easier way to update your contents
so you could rank higher in SE. It is fine if you go with a free blogger service
but I would go with something paid because they are more honorable.

Suppose I just want my blog to rank with say 6 to 7 posts only, will that work with rankings?, or if I start a site with 6 to 7 content and a blog like that, which one will be better off in terms of ranking?

It is all based to your content if it is SEO-friendly or not. But in my
experience, Google love blogs which are being updated every week or day.

So does that mean if I don't want to add more content then should I just go with building a site and not create a blog?

Whether you build a static site or a blog doesn't really make a difference when it comes to rankings. The content you plug in to you site and the backlinks you build will determine how you rank!

Using blog is a good idea but you need to update it with quality content regularly. If you can maintain your blog properly then you can go for a free blog service, no problem.

Updating quality content regularly is a factor but please note that backlinks
serve as a very important role of your ranking just like what SarahZT said.
Many mini-sites who don't update their websites monthly or daily and they
still rank #1 in the Search Engine.

Well it is all up to you but I still would go with blog because there are many
plugin that helps you to rank and make business goes easier like all-in-one
SEO plugin, easy adsense and etc. Please note, updating your content daily
doesn't mean that you are going to rank high. As long as your content is
SEO-friendly, and your website should have an amount of backlinks.

Blogs are so much easier to manage, especially if you're not a techie.
I started out with a static (regular / nonblog) site, but the maintenance was such a headache! Switched on over to using a blog - I currently use Wordpress - and love the ease of use and versatility. Lots of theme, and free plugins.
